Whenever a recipe calls for mayo, I substitute cashew cream. It is so much lighter yet still creamy.
You just soak a half a cup of raw cashews for at least 3 hours, then drain, rinse, and put in a blender with some lemon, garlic, a splash of vinegar, S&P and enough water to cover the cashews (sometimes I use almond milk instead for a little sweetness). For a nice potato salad dressing you could also throw in a generous glob of mustard, some chives and dill. Or, for a spicy dressing, go with chipotle and cilantro.
I like the classic potato salad mix-ins: peas, celery, pickle & red onion....maybe some caraway ;)
Thanks, Picklers! You've given me some great ideas ... including jettisoning the devilled eggs, the chicken burgers with arugula/Parm/mayonnaise and sundried tomato pesto, the Caesar salad ... and simply serving potato salads.

make salsa verde by puree-ing parsley, capers, black pepper, and olive oil. split into two bowls. use one to toss the fresh potatoes in before roasting, then add the rest after roasting. probably the best way to eat potatoes
I've never made this one, but it sounds really good, and it doesn't have mayo in it.
