I also let my potatoes cool on the stove so excess water will as steam releases water. Then I refridgerate them before making my potato

Salt your potatoes while they cook to help drain the water while cooking and then you also don't need to salt it while making it. Let each salt their own when they eat it.

There's some water left in the cooked potatoes that emerges as they cool. One technique I learned is to drain cooked potatoes from boiling water and then return them to the empty pot on the stove for a few minutes.
This extra heat helps remove some of the water left in the potatoes.
Then remove them to a bowl and add dressing and other vegetables you may want in your potato salad.
On greens, same thing. Water still in them exudes when sitting. So wash & spin them in a salad spinner or wrapped in a clean dish towel. But don't dress it if you plan to use it over several days. Rather, chill prepared greens covered & naked in fridge and add dressing just before serving.

PS Another cause of water jn the salads left to sit a day or two in the fridge (aside from water left in the vegetables) is the salt in the dressing. It draws water out.
So maybe use a dressing without salt and see if the wateriness disappears or reduces. Then add salt at table or just before serving.

What’s in your potato salad? Some vegetables will continue to release water when they are sitting around. Green salad does this, too.
