nestle into a bed of sauerkraut, salt and pepper and bake as above. or apple and sauerkraut. and/or onion slices. i usually cover the pan with foil until last 20 minutes to prevent burning the kraut. but you do want to have a little browning those last 20 minutes.

Add salt and pepper and bake in the oven at 350 or lower for an hour or more depending on thickness. The bone will separate from the meat very easily.
