Just made a killer shredded papaya salad with half a green papaya. What to do with the other half?

I've never used it or seen it used in any other dishes. There has to be some out there.

I've hesitated buying a green papaya because of that exact reason. They are HUGE!

Scoop the seeds, cube, lemon or lime juice, freeze, and eventually turn into a killer sorbet. Maybe with some kiwi, some pineapple, some tequilla . . .
