Baked Salmon and Garlic Mushrooms

Recently I have lost 25 pounds and have been coming up with very simple yet delicious meals for my husband and I to eat. Keeping in mind it is low cal and healthy. I am trying to get a different vegetable each day into my meals. Today it is Mushrooms! —Gita

What You'll Need
Ingredients
  • 2 pieces Wild Salmon
  • 12 pieces Mushrooms
  • 1/2 cup Crushed garlic
  • 1 teaspoon Chili flakes
  • 1 teaspoon Worcestershire Sauce
  • 1 pinch pepper
  • 1 teaspoon Lemon Juice
  • 4 drops Vegetable oil or smart balance butter 1 tsp
  • 1 pinch Salt
Directions
  1. Wash the fresh Salmon pieces thoroughly. Place in a baking dish skin side down. Sprinkle the lemon juice, pinch of salt, chili flakes, little crushed garlic on top of the salmon and drizzle some vegetable oil on it. Preheat the oven 400 degrees, and bake the salmon for exactly 20 mins. Use the broiler if you want to crisp the top of the salmon for about 2 to 3 minutes.
  2. For the mushrooms, clean them and discard the stems and cut them into thin slices. In a non stick pan, add a few drops of oil/smart balance butter and add crushed garlic to the hot pan, and when they get a little brown add the mushroom slices. Remember not to crowd the pan. Add a teaspoon of Worcestershire Sauce and some pepper on the mushrooms and allow for the liquid to cook off some while still moist. Serve with salmon that you have just baked.
