About 20 years ago when I was on vacation in Israel, I first discovered avocado toast. My friends there ate it for breakfast. They rubbed tomato and salt and garlic into the bread then spread on mashed avocado. Delicious.

I love a toasted sesame seed bagel topped with smashed avacado, a squeeze of lemon, an over easy egg, flake salt and course ground pepper. I could eat it every day.

Good toast spread with coconut butter, sliced avocado, squeeze of lemon, S&P and a sprinkle of radish sprouts. My favorite breakfast or just a great snack. Broccoli sprouts will also work but I prefer radish sprouts.

Other favorites: crushed sardines + mustard on a whole grain English muffin with a generous shower of freshly ground (Oaktown Spice) black pepper. ;o). P. S. Favorite place to eat it? On my deck, outside!

For Marmite lovers, a slick of that underneath the avocado adds an extra savoury kick. I also like Smitten Kitchen's version -- essentially avocado on toast topped with some finely diced cucumber that has dressed with sesame oil and rice wine vinegar, and sprinkled with toasted sesame seeds.

Crunchy toasted sourdough or seedy whole grain bread with a tomato rubbed into it (like pan con tomate), chunky fork-smashed avocado and shaved parmesan. Smoked salt and/or aleppo pepper. Yum.

This just made me crave avocado too much! Lucky for me I always have ripe ones ready :) I know what's for lunch now!

You really know the way to a girl's heart, Marian. (Also, Iris Cafe is so close to my apartment, how did I not know about its existence until now?!)
