How to Turn a Mallomar Cookie into a Pie

Mallomar Pie is really more of a tart, but that’s just semantics.

This "pie" is just like the classic cookie, but with a few twists. The base is a salted shortbread cookie (use the good Irish butter – it’s worth it), which is followed by a layer of dark chocolate ganache. That's not found in the traditional cookie, but it helps to break up the mound of vanilla marshmallow that comes next. The whole thing is then covered in dark chocolate glaze.

The whole pie is pretty cute, but it looks even better once sliced.

Makes one 10-inch pie or tart

For the crust:

10 tablespoons unsalted butter, room temperature
3/4 cup confectioners' sugar
1/2 teaspoon vanilla extract
2 cups all-purpose flour
1 teaspoon salt
1/4 cup chopped dark chocolate
1/4 cup heavy cream

For the filling and topping:

3/4 teaspoon powdered gelatin
5 egg whites
1 cup sugar
1/2 cup light corn syrup
1 1/2 teaspoons vanilla extract
12 ounces dark chocolate, chopped
3 tablespoons coconut oil
