How to Make Soup Out of Salad

January 26, 2016

The grain salad I made this weekend to eat through the week seemed like a good idea at the time. It'd hold, it'd allow me to use my oven (a definite cold-weather benefit), it's good with an egg on top. But then we had a little bit of snow and now all I want to eat—drink, rather—is soup.

Don't abandon your lunch. Just add broth.

Instead of giving up fully on my very good farro and roasted mushroom salad (thanks, Merrill!), I put on five layers and ran to the nearest market for some broth. It went into a mug, which went into the microwave with the farro salad. When both were warm enough, I mixed them together and added a little more pepper. Soup!
