You said you'd only watch one episode, but now you're halfway through the second season; after-work drinks turned into karaoke, which turned into more after-work drinks; counting sheep isn't quite as efficient as you hoped it'd be. There are a number of reasons to be awake at midnight—that tricky hour stuck halfway between dinner and breakfast. But fortunately for us—and serious cases of Chef's Table-inspired hangries—there's a little thing called the Midnight Snack.
Don't shy away like you've never gazed into the fridge longingly at ten-past-middle-of-the-night. We have delicious, sweet, baked proof, courtesy of late-night recipes you've posted on our app, (Not)Recipes. Here are 14 of your midnight snack recipes—your future sleepless nights will thank you:
If you're craving something sweet...
Took a stab at some fruit by the foot last night since 1. Our berries were on their way out too quickly and 2. Our oven goes as low as 170. A success! Blackberry, strawberry, raspberry, water and a tiny bit honey, lemon and lemon zest.
Lots of egg yolks (leftover from macaron making session) - maybe 5 or 6 - plus a few whole eggs + cup of lemon juice + cup of sugar. Boil until 170, strain over pre made crust. Crust is 1 stick of butter + 1 1/4 cups of flour + big pinch of salt blitzed in food processor and pressed into 8x8 pan lined with parchment w/1"
overhang. Bake 350 until golden. Swiss meringue on top + torch from Strosniders. Original recipe on SeriousEats, "Sunny Lemon Bars"
Greek yogurt and powdered peanut butter dip with apples. Perfect #healthy #snack.
Cereal Treats! After spending 20 min discussing the best cereal to use, we determined it was Cinnamon Toast Crunch in place of Rice Krispies. Make as you would normally. Cereal, melted butter + marshmallows. Oh also, pinch of salt. Yum!
Baked a batch of oatmeal sandwich cookies, recipe from NY Times. Made with oatmeal, dates, coconut, cinnamon and other normal cookie ingredients. Filled with sweetened cream cheese and mascarpone cheese mixture.
Smoked Sea Salt & Cumin Oranges
I mixed a few shakes of cumin into some smoked sea salt then sprinkled over sliced cara cara oranges.
If you're after something savory...
Fry up pancetta, Slice Brussels sprouts & garlic cloves, mix both with walnuts, olive oil & salt. Bake at 400 for 30 min, I like the Brussels nearly burnt and crispy! Drizzle balsamic on top.
Baked eggs: preheat oven to 350. Grease ramekin with olive oil and crack in one large egg. Top with chopped prosciutto, some leftover sautéed kale and a splash of heavy cream. Sprinkle with salt and pepper, minced chives and some crumbled goat cheese. Set on a baking tray and place in the oven for 10-15 minutes, depending on how runny or set you like the yolk. Serve with crusty bread for dipping.
Ful Medames - canned fava beans mashed with tahini, olive oil, lemon juice, garlic and your fave herbs. I topped mine with orange zest, lemon zest, paprika, cilantro and parsley #vegan #vegetarian #favabeans #beans
Simmer chicken broth with spices like star anise, cinnamon bark, bay leaf, peppercorns.
As an option, if you have dried mushrooms handy, reconstitute and add the mushroom broth for added flavor.
Season with soy sauce or tamari, mirin, and fish sauce. Remove whole spices.
Poach eggs and add frozen udon and tatsoi. You can use other greens you like.
Serve and enjoy.
Courgette + egg wash + seasoned breadcrumbs + bake.
Serve with hot sauce + (sour cream + blue cheese crumbles)
#notcontest herb baked ricotta // spoon about 1 cup ricotta into a small baking dish. Drizzle with olive oil and sprinkle with herbes de Provence and kosher salt. Bake at 400F until bubbly and lightly browned on top. Serve with crackers or crostini. #snack
Simple udon:
Boil udon noodles. Top with wakame (seaweed), tempura bits (can be found at Japanese groceries stores) and white goma (sesame) seeds.
Sweet potato chips. Thinly slice a sweet potato (or use a mandoline). Drizzle with olive oil and sprinkle with garlic salt. Evenly distribute on a baking sheet covered with tin foil. Bake for 2 hours at 250, flipping the chips after an hour. Enjoy! #healthy #healthyeats #snack
