15 Muffins Just Right for Brighter Winter Breakfasts

We’ve kicked off the new year in our Baking Club with Thomas Keller and Sebastien Rouxel’s Bouchon Bakery. We were ready for an onslaught of fancy French pastries, but instead, we've seen many members easing into the month with muffins. We can't argue with their choice—muffins are easy (one-bowl baking at its best) and make for a sweet start to the day (like a mini breakfast cake).

The muffins shown above all come from Bouchon Bakery, but we wouldn't want you to miss out on a perfect batch of muffins just because you haven't picked up a copy of the book yet. Here are 15 of our favorite muffin recipes, with options that range from gluten-free to vegan and fruit-filled to streusel-topped. Choose one (or more!) of these for a sweeter start to your day.
