My favorite way was being handed a freshly opened scallop as the crew opened the cage they had just pulled up on a boat in Iceland a few years ago. Nothing beats the flavor of a raw scallop still on its shell with the roe still attached to it. It’s too bad we can’t get scallop roe here in the US like you can in Europe.

You're right, wild scallops in the US have to be landed pre-shucked. However there are some interesting scallop aquaculture projects happening in Maine which will allow the whole scallop to be sold in shell, so we're tracking how those pilots develop!

thanks for the explanation which might help explain why as an occasional supermarket scallop buyer Ive never understood the scallop hype....will have to find 'real' ones to test. btw, are frozen scallops considered to be dry, or are they kept in the hold and then treated and frozen when the boat docks after 14 days at sea?

You can definitely have frozen scallops that are dry. At Luke's Lobster's online market we only sell dry dayboat scallops, but we flash freeze them for better quality control during transit. If frozen and thawed carefully there's no impact on quality. As long as they're never soaked, they're dry. So LukesLobster.com is one place you'll definitely find the good stuff! Costco maintains their scallops, fresh or frozen, are never treated with chemicals. My guess is that they are not day-boat scallops. They are an affordable alternative and are available nearly every day.

Chemical free is a great place to start, and I know Costco has some strong sourcing standards!
