We’re getting ready for fall in the best way we know how: by collecting inspiration for all of our upcoming baking projects. Fall is the start of the unofficial baking season—the weather cools down, activities turn indoors, and winter holidays appear on the horizon. It doesn’t hurt that the season is also associated with flavors that are particularly well-suited for baking, whether you lean towards apple, cinnamon, or pumpkin spice. We’ve gathered some of our favorite highly rated and fall-ready baking recipes and divided them into four categories: cakes and quickbreads, crisps, pies, and cookies. Without further ado, here are 52 baking projects we’re excited to tackle this fall.


Cakes & Quickbreads

If cakes are your go-to baking project, we’ve got tons of ideas and inspiration to get you started. From straightforward quickbreads to elaborately glazed bundt cakes, these recipes rely on classic fall flavors like pumpkin, apple, pear, and ginger. Crisps & Crumbles

Crisps and crumbles are some of the best ways to use up seasonal fruit—and in the fall, that means lots of apples, pears, and cranberries dressed up with details like a salted oat crumble or an impressive hasselback presentation. Or, to keep things simple and quick, try baking your crisps directly on a sheet pan.


Pies, Tarts & Galettes

There’s no reason to wait until Thanksgiving to make your first pies and tarts of the season, especially if you keep things straightforward with a freeform galette or a press-in tart shell. Flaky, buttery pastry pairs especially well with peak season apples that are sweet, tart, and crisp enough to hold their shape when baked.
