Summer is finally here and the getting is good at the farmers' market -- it seems like everything worth eating is in season! Our original question for this week's group post was What is your favorite summer vegetable? Once people started answering, though, the favorites began to emerge. Sure, maybe Kristen picked radishes, and Amanda picked Roma beans, but the rest of us basically kept to the same favorites.
Here they are below. What is our list missing? What are your favorites? Tell us in the comments!
1. Tomatoes: Merrill, Stephanie, Christina, Kenzi, Brette, Michael, Nozlee
Michael: Especially Sungolds.
2. Corn: Peter, Merrill, Kenzi, Rachel
Peter: At the risk of offending the tomatoes and lemon cucumbers, I'm going to go with plain, old corn on the cob (though technically, I think it's a grain, not a vegetable). I think there's nothing that screams "Summer!" like biting into a juicy, just-barely-steamed, touch of butter and dash of salt ear of sweet corn.
3. Zucchini: Jennifer, Nozlee, Jenny, Kenzi
Jennifer: Don't forget squash blossoms!
Jenny: I will speak in defense of zucchini.
4. Eggplant: Michael, Christina, Rachel
Rachel: Especially for cooking Indian food!
