I would think it depends on what you add to it, but generally its fine on the counter. I imagine it would keep longer in the fridge though. I keep mine in the fridge because I don't like things on my counter. Mine only lasts about 3-4 days since we eat salads everynight, but i will take it out of the fridge about an hour before I need it so it thins out.
