I'm looking for a substitute fir 2 cups of a dry white wine for a potato soup that already calls for the same amount of vegetable stock.

agree with allans on both fronts. If the soup doesn't already call for cream or dairy you can sub a 1/2 cup of stock for cream

Try a dry vermouth, or if you prefer to avoid the alcohol (2 cups seems like a lot) just use only vegetable stock
