I am using a mandolin to slice raw beets for a salad .... Never used raw beets , do I have to peel the beets like I would a potatoe

You might try golden beets no bleeding of colors I would peel them

I would probably peel - but that may not be necessary! And yes PLEASE watch your fingers! I bought kevlar gloves after Jaws got me ....

No, the first couple slices may have to be 86'd, but the rest should fine. You just want to scrub them down extra well.
