I have a question about the recipe "Chinese-American Pork Roast" from monkeymom. I know pork shoulder and pork loin are not generally interchangeable, but I'm thinking of making this with a pork loin I have in the fridge. Will it work?

I would not. Or if I did, I would cook the pork for far less time and expect it to have less depth of flavor than the shoulder.
