You could also wrap it in parchment paper or tin foil I usually stuff mine with thinly sliced garlic thinly sliced lemon and fresh herbs like parsley and dill salt and pepper inside and out and a drizzle of olive oil and white wine cook it slow and low so that all the flavors have a chance to blend nothing better

You can baked a whole fish in a salt crust. The salt doesn't make the fish salty, but it makes for a very moist fish. Here's a link for Whole Fish Roasted in Salt:
