we bought a 21 lb frozen turkey on friday and it's been in the refrigerator since. should we take it out of the packaging or leave it out at all between now and thursday?? thanks

Leave it in the packaging as that is usually microbiologically sound and keeps it safe. Only open the packaging one day before if you are going to dry or wet brine it.

If the turkey has been in the fridge since Friday, leave it in the bag until you are ready to cook it. Do not leave it out at any time before cooking, except one hour before you put it in the oven. Food safety comes first. It should be well defrosted by Thursday
