What is the best technique to roast two turkey breasts, one is 7.75 the other 8.15. I want to make sure they have a good flavor and worried that I won't have enough drippings to make gravy....

You are right you may not have enough drippings, but look at the contest on gravy here a vegetarian Mushroom Thyme Gravy beat out all the others. Here:

Roast your breasts at 325 until an instant read thermometer registers 160-165. Tent with foil and let rest at least 15 minutes.
