What kind of pies? Custard types need to be refrigerated.

yes that should be fine. Just as long as it isn't custard or cream based.

If they're custard or cream-based, make sure you cool them completely before refrigerating them. And if your pies are not custard or cream-based, it's totally fine to leave them out, but don't cover them with plastic wrap or the crust will lose its snap.
