I want to make a Gorgonzola spread without Mayo, to smear onto a sandwich. Any ideas? Leave it at room temp to soften?

I definitely wouldn't use mayo. I think room temp sounds just fine and I probably wouldn't add anything more. But if you need to loosen it up a bit more, add a bit of cream.
