what to use to make sweet potato noodles

Are you talking the Asian style noodles? Which are like rice noodle, but made with sweet potato starch....those you purchase dry from Japanese or Korean stores.
If you're talking a device to turn vegetables like potatoes, zucchini, carrots etc. Into strings or noodles type threads....that's a Vegetable turner. People use that or similar devices to make raw food zuchinni noodles. I use it for garnishes for sushi...raddish threads, carrot threads. And sometimes for potato threads (to be fried) or wrapped around fish and fried.
