    I don't have and can't find Usukuchi. What is the best substitute for two cups of it?

    Hmm - can you find plain old light soy sauce? if no - maybe you could try something like 1 c soy sauce 1 c low salt broth to lighten it up a bit ... this is off the top of my head, untested ...
