Any 8 inch cake that makes two layers should make between 24 and 36 cupcakes. In other words, one cupcake is about 1/2 cup of batter - a 8 inch cake usually has about 12 cups of batter. The One Bowl Chocolate Cake only has one layer, but it's pretty thick and could hypothetically be made into two.
