To rephrase: do I have to do anything different w/ dry aged sirloin as opposed to wet aged?

If it was grass fed, that is when you would cook it differently. Grass fed cattle get to wander and graze and if they are fed grains at all, it's only toward the end, so they are lean and need to be cooked at a lower heat.

Do take the steaks out of the fridge and let them come to room temp. As kim said, season well. Also be sure to let them rest after you cook them. Dry aged beef is so awesome.
