Can I substitutes the pork belly with brisket?

I have had brisket buns at Momofuku. I believe they used horseradish sauce in place of the hoisin and perhaps added some pickled red onion. Can't remember but it was really good!

I can't remember, it could have been a cream sauce or horseradish mayo.
