Baked Sardines recipe.
1.Marinate the Sardines: in a greased baking dish, carefully arrange the fish slightly overlapping one another. Drizzle the extra virgin olive oil, garlic, oregano, lemon juice, pepper and sea salt. Cover.
2.In a saute pan, on a medium heat, add the 1/3 cup of extra virgin olive oil and 1 onion. Cook until their soft and glossy.
3.Add the 4 garlic cloves and continue sauteing for another few minutes.
4.Then add the 3 grated tomatoes,1 diced tomato, season with salt and pepper and turn up the heat so it comes to a boil.
5.Add the hot water and again bring it to a boil.
6.Once it boils, turn down the heat and let it simmer until the tomato sauce thickens.
7.Then set the sauce to the side so it can completely cool.
8.Pour the cooled tomato sauce all over the sardines, sprinkle with parsley and drizzle a little more extra virgin olive oil.
9.In a preheated 400F degree (200C) oven bake for about 20-25 minutes.
10.While it’s baking, check to see if the sauce needs a little help by adding some water.

I use the canned one. Take a leek or green onion w some olive oil sautéed, add some garlic then tomato paste (or sauce). Add the sardines. Cook a min or two. Add salt if needed. Then fresh chopped cilantro. This is my favorite way to eat sardines.

My mother would scale and clean sardines, cutting shallow slashes into the flesh. Then she would mix salt and chile flakes or mashed fresh chiles and rub it all over the fish. After that, the sardines are pan fried until lightly browned and cooked.

My Dad would simply broil them with olive oil, lemon, salt and pepper but here's one that looks good to me:
