i wonder if you could use rice paper sheets...you know, the kind made into wraps in thai restaurants? brush with butter and stack?

I have never seen such a product. However, could you perhaps substitute puff pastry? I purchased--but have not yet used/tasted--GF frozen puff pastry Froma company called "geefree."

I have not googled it but i don't think there is such a product. The paper-thinness of the filo leaves- requires the maleability of a wheat flour- based dough.
