Making risotto tonight, the recipe calls for white wine. The only white I have on hand is prosecco. Good idea? Bad idea? What do you think?

I just used some leftover champagne, it was great. I have also used vermouth.

I've even made risotto before without any white wine or replacements, and it turned out fine

Should be fine - there are definitely recipes that use champagne.
Or you could always use white vermouth instead.

I've used prosecco or other bubbly in risotto with no problem!
