Making risotto tonight, the recipe calls for white wine. The only white I have on hand is prosecco. Good idea? Bad idea? What do you think?

I've used prosecco or other bubbly in risotto with no problem!
Should be fine - there are definitely recipes that use champagne.
Or you could always use white vermouth instead.
should be fine, don't need that much anyway
I've even made risotto before without any white wine or replacements, and it turned out fine

great idea if ya ask me!!!
I just used some leftover champagne, it was great. I have also used vermouth.
Happier iced coffee, cereal, and cookies, right this way.
