I'm making a risotto with the things I have in my kitchen. However, I don't have any white wine! im thinking about dry vermouth. Thoughts?

I use NOILLY PRAT in fish risotto, its the only way!

One of the best things I have learned on Fod52 is to keep dry vermouth on hand and use in recipes calling for white wine.

Often use vermouth instead of wine for risotto. Works well for me.

Yes! Keep in mind that it has slightly more alcohol than wine, so just be wary of that if you're trying to "simmer off" the alcohol -- it's just take a few minutes longer.

dry vermouth should be a good sub! (though it may not be as fruity as white wine.) if you're nervous, you could do either do all or half-chicken broth!
