I'm with all of you who've commented negatively about tilapia. On top of all the other reasons not to eat it, tilapia is not tasty no matter how you season it. I'm always amazed that anyone would eat it.
Are you sold on tilapia, or are you open to other mild flavored fish? I'm asking because tilapia is is an unsustainably farmed fish that is not good for the environment. And the farming practices used for this fish makes their healthfulness suspect. Sole, flounder, whiting, ocean perch: there are many alternatives that are better for you and the earth - not to mention that they also taste better!
Flavorings for mild white fish? I like to blend breadcrumbs with garlic and herbs and make a crust. Use whatever herbs you like best.
