Making Ina Garten's herb roasted turkey breast. She says to cook for 1 3/4 - 2 hours.

After one hour, it's 100 degrees. Should I increase the temperature? Also, the skin doesn't seem to be browning at all. Thanks!

What temperature are you using. If the meat comes to the right temperature in about two hours, but skin is still not browned, you can always finish it under the broiler....
