Use it to knead dough for flatbreads, or cook your lentils/soups in it. Its very nutritious and adds a flavor punch! If you don't mind the taste, you could also temper it with a little cumin and curry leaves and drink up! This is exactly how we use paneer whey in India.
Some of the leftover tofu whey can be used as a coagulant for the next batch. Large commercial tofu producers also bulk this out to as livestock feed. A lot of food processing waste ends up in livestock feed.
I don't know the details about paneer, but it's probably similar.
