We have four kids and birthdays are a huuuge deal. Everyone asks for this cake - it tastes amazing, is super moist and chocolaty! My husband and I love it because it is super easy! .... It's Mike Harris' (22nd premier of Ontario :) ) chocolate cake recipe:
Into ONE BOWL (I know, I love this part) add:
1 1/2 cup brown sugar
1/2 cup vegetable oil
1/2 cup milk
2 eggs
1 tsp vanilla
1/2 tsp salt
1 3/4 cup flour
2 tsp baking powder
2 tsp baking soda
1/4 cup cocoa
Mix all the above and then add:
3/4 cup boiling water.
Mix well.
Bake at 350'F for 30 - 40 minutes (until done, you know the drill)
Oh, I forgot to add that when it's cooled we melt chocolate and pour it on top... seriously good! My husband is making it this weekend for our son's 17th and adding a layer of chocolate ganache in the middle for extra amazingness!
The original recipe called for a 10" bundt or tube pan but I don't have either so I have made it in two 9" cake pans and as cupcakes with great success! Sorry for not being specific :)
Plantation Inn in Charleston has an amazing coconut cake and they gave the recipe to Martha Stewart. There are also copy cat recipes around. My family was FedExed a cake from there as a gift. There's been no other cake at Christmas... 3 step process is loooong. But if coconut is a fave you must try this!

I second Tender Yellow cake! Filled with custard cream and topped with ganache it makes a fabulous Boston Cream Pie. If you pour the ganache warm, it drips down the sides in a picturesque way, and you don't have to fiddle with smoothing the sides. https://food52.com/blog/2262-tender-yellow-cake

There was a "Truffle Torte" from R.L.Beranbaum on this site a few days ago- I haven't made it, but have made very similar cakes; you couldn't do much better if it's chocolate you want.
