Make a bibb lettuce salad with peeled, sliced orange rounds - use all kinds of oranges - and make a vinaigrette using the juice of one orange, olive oil, and 1/2 tsp. finely chopped jalepeno pepper. Also, this is a great slaw with Mexican food. I make it at least once a month: https://food52.com/recipes/8746-jalapeno-apple-slaw-with-honey-lime-vinaigrette
A green bibb and avocado salad with a cumin vinaigrette (this is my recipe I use https://food52.com/recipes/34188-smoky-honey-lime-vinaigrette) is a fresh foil to a nice hearty chile. I'd be interested in what recipe you use for the chile verde, I am looking for a good one!
i used this recipe chttp://www.seriouseats.com/2017/03/the-food-lab-easy-pressure-cooker-chile-verde-with-pork.html. i thought it was tasty and well spiced but i'm from new england so what do i know... i served it with tortillas and a cabbage and red pepper slaw with a cumin vinegrette. was well appreciated by my guests
I made this salad exactly as you suggested, with the cumin vinaigrette, and it was absolutely incredible. I will definitely be making this again and again! Thank you so much!
i usually serve it with rice...it soaks up the sauce. you could serve it with refried or pinto beans. i also like to serve it with a pile of shredded cabbage and sliced oranges with a cumin vinaigrette. buen provecho.
So I'm going to give the cole slaw a shot -- I got a smallish head of cabbage, and three oranges, and made the cumin vinaigrette mentioned below. Is there anything I'm missing?
