Think of all the sweet flavors that go with chocolate...then use one or more of them to balance the bitterness of the coffee.
Raspberry, cherry, strawberry, banana.
Then balance it with some herbs...mint or tarragon come to mind, maybe other that you like.
Throw in some roasted root vegetable, optional dairy, baby greens, dressing to taste.
