A question about a recipe: Cider Brined Pork with Calvados, Mustard and Thyme

I have a question about the recipe "Cider Brined Pork with Calvados, Mustard and Thyme" from Oui, Chef. Could I make this with boneless pork chops? I think they are sirloin. Would I need to adapt anything?
