It depends what's on your menu, but there's a lot you can get done now! I think dessert, rolls, or stuffing hold up best in the freezer/refrigerator, but feel free to explore some of the suggestions in these posts :)

I make my pie crusts and freeze them around now. Also, I make the homemade bread for dressing/stuffing.
Some recipes for stuffing with bread or cornbread require that you dry out those ingredients.
