I have a question about the recipe "Grace's Ginger Scallion Fish" from Joy Huang | The Cooking of Joy. Do you roast the fish covered or uncovered? Wondering if the fish filets will dry out if roasted uncovered?

I roast them uncovered and have never had an issue with them drying out. The rice wine helps to "steam" the fish and the hot oil at the end keeps the fish moist.
