Yes it is. I assume you will be using canning lids and proper canning jars to do this, though. I suggest you check with a reputable canning site, like Ball or the FDA for the proper sugar/juice proportions and the processing time. How long you need to process your jars will vary depending on your altitude. You also want to be sure you have the right proportions of sugar and juice. As a rule, you don't need quite as much honey as sugar.
