I was doing Whole30 a few months ago and simply replaced the milk in my usual mashed potatoes with coconut milk. I didnt bother trying to substitute the butter because it was already a nice smooth texture, and frankly nothing adequately substitutes for the flavor of real butter, in my opinion:). It was delicious and Ive continued making it that way.

That said, I suppose vegans will have to decide for themselves whether or not almond products are really vegan due to the heavy exploitation of honeybees in the almond production process.
Perhaps soy or rice milk might be better than almond milk.

The recipe actually calls for non-dairy milk:
"1 cup almond, soy, rice, or other non-dairy milk"

That rendition uses milk. As far as I know, milk (or other dairy products) is not vegan.
If dairy is okay for vegans, then Joël Robuchon mashed potatoes would qualify.
