I have a smoked turkey and it’s been cooking for 2 hours at 325 (per instructions) but the thermometer won’t hit 165! It’s only at 130

How much longer should I cook the turkey or can I pull it out? I don’t want it to get dry...

No worries! Just cook it a little longer, until the thermometer hits 160°F. Then you can pull it out and let it carryover cook to 165, if you're worried about it drying out. But I would let it go a liiittle longer.
