I have some dark meat chicken pieces in the freezer. I would like to defrost, bake, and refreeze.
Would the flavor and/or consistency be too compromised, e.g too dry, etc.? If so, is there anything I can do to mitigate this?

But/and why go through all these several steps?
If the chicken is getting near the end of its life in the freezer, better to defrost, cook and eat soon.
Cooking and returning to freezer won't extend life, texture or flavor of the chicken very much.
