Most cooks discard leftover meat marinades because of fear of contamination by contact with raw meat- one of my least favorite things to do, but there it is. If you buy something marinated from the store (generally not recommended) it will be shrink wrapped so that only a few ounces of marinade are needed for a good sized piece of meat- I wonder if something like this could be done with a vacuum sealer at home.
