Luciana's Porchetta - Accidentally doubled marinade
This is my first time attempting this meal. I reduced the amount of pork from 6 to 3 pounds but forgot to halve the spice marinade. So now it's sitting in the fridge with twice as much fennel, rosemary, garlic, than necessary. Do I let it marinade overnight and just scrape some of the marinade before putting in the oven? Or do I need to wash the meat off entirely as soon as possible and make a new marinade? Thank you!
