Freeze the pie...or freeze the fruit??

My son wants me to make a strawberry rhubarb crisp for his wedding in October...Should I make the crisp in the midst of the season when the rhubarb and strawberries are fresh, and freeze it unbaked? or should I cut and freeze the rhubarb and berries when they are at their peak and make the crisp from start to finish in October???

Hi Heather! I would freeze the strawberries and rhubarb at their peak, then make the crisp from start to finish right before the wedding. Congrats to your son!
