How to texture vegan jerky so it mimics traditional jerky.
I have been making vegan jerky and have used soy, gluten, and texturizing vegetable flour for the base. The flavours are there but I can’t seem to get the texture of traditional meat jerky or texture like the noble vegan jerky. Do I need to use soy curls or is there a different base I should use for the jerky.
