I am GF, recipe sounds really good!

A gluten free flour mix should work. The amount of sugar in this recipe doesn't look like a lot to me. Sugar does a lot in baking apart from sweetness. I'd say go ahead and play around with the recipe, but keep in mind that you might end up with a different cookie than the one above.
