Do you have a recipe for using breadcrumbs in making new bread?

We get a ton of bread from the local food banks. So much that we end up throwing it out before we can eat it. Years ago, there was a scandal of a local bakery that ground up their day old bread and used to make their new bread. So we started creating dried bread crumbs... I've looked for recipes on the internet but no luck. Anyone???

And/or use them where you would use bread or other grains (pasta, rice):
1) sweet baked pudding;
2) vegetable casserole;
3) instead of pasta sheets with traditional lasagna filling and sauce;
4) to make crumble topping for fruit dessert;
5) store, tightly sealed, up to a year (pantry or freezer; not fridge).

I think some types of bread are traditionally made with old breadcrumbs, including pumpernickel-like breads. I have a recipe for pumpernickel with old bread crumbs, but it's not a lot, only 1c. Let me know if you'd like me to message it to you.

You could also just try experimenting with adding some bread crumbs to bread recipes you're already comfortable with and see how it goes.
